This savory biscuit casserole dish tastes just like homemade sloppy joes like Mama used to make, but it’s just different enough to make dinner exciting again. I’ve seen some people refer to biscuit casseroles as bubble bakes which is such a kid friendly name and this is fits as a kid friendly dinner for sure!

One of the most versatile and valuable ingredients in a home kitchen these days is canned biscuit dough. It is light, fluffy, and once you pop open the can, all traditional biscuit rules go out the window. In this recipe I used the biscuits a lot like I do when making monkey bread! Turns out that you can coat biscuit dough in more than just cinnamon and brown sugar!
What do I need to make Sloppy Joe Casserole?

- 1 1/2 pounds ground beef
- 1 can sloppy joe sauce or Manwich sauce (15 ounces)
- ½ cup chopped dill pickle slices
- 1 can refrigerated biscuits (16 ounces)
- 8 ounces shredded Colby jack cheese or cheddar cheese
- If you like things on the zesty side, try substituting pickled jalapenos for the pickles and shredded pepper jack cheese.
- If you like veggies, try adding 1/2 cup diced onion and bell pepper to the ground beef as it browns.
- Use ground turkey instead of ground beef to lighten this up a bit.
- Instead of sloppy joe sauce, use an equal amount of barbecue sauce for a BBQ Biscuit Bake.

- 8 ounces shredded colby jack cheese
- Preheat the oven to 350 degrees.
- Brown the hamburger, drain the grease and return to the pan.
- Add the sloppy joe sauce and chopped dill pickles.
- Cut the biscuits into 6 pieces and drop them into the meat mixture along with 1 cup of the shredded cheese. Stir to combine, taking care to separate any biscuits that try to stick together.
- Spray a 9×13 baking dish with nonstick spray and spread the beef and biscuit mixture in the pan. Sprinkle the remaining cheese over the top.
- Bake at 350 degrees for 28-30 minutes or until the biscuits are golden brown.
Step by Step Instructions:

Step 1: Preheat the oven to 350 degrees.
Step 2: In a large skillet Brown the hamburger over medium heat, drain the grease and return to the pan.

Step 3: Add the sloppy joe sauce and chopped dill pickles.

Step 4: Cut the biscuits into 6 pieces and drop them into the meat mixture along with 1 cup of the shredded cheese. Stir to combine, taking care to separate any biscuits that try to stick together.

Step 5: Spray a 9 x 13-inch baking dish with nonstick spray and spread the beef and biscuit mixture in the pan. Sprinkle the remaining cheese over the top.

Step 6: Bake at 350 degrees for 28-30 minutes or until the biscuits are golden brown.
Serve with your favorite sloppy joe toppings, if desired, such as ketchup and mustard.

You can do the prep work up to 8 hours ahead of time by doing steps 1-5. then cover your baking dish with plastic wrap or aluminum foil and place in the refrigerator until you're ready to bake. Bake as directed. Alternately, you can make and freeze the entire casserole ahead of time. Simply bake as directed, cool completely and cover tightly with plastic wrap and aluminum foil. Freeze up to 3 months. When ready to serve the casserole, place it in the fridge to thaw overnight and reheat in the microwave to heat through.Storing Leftovers:
