Every busy home cook needs a few tried and true slow cooker dinners, so here’s another one for you to add to your list! This recipe yields tender chicken topped with melty Swiss cheese and plenty of French onion soup flavor.
I think it’s kind of a weird thing for kids to be into, but my kids love anything French onion. My French onion smothered pork chops aren’t just one of the most popular recipes on my blog, it’s also one of their favorites. This easy crock pot chicken recipe is a bit different than that one, but it still ticks all the boxes for an easy main dish.

Easy Dinner Recipe
One of the things that I love about this easy crock pot French onion chicken is just how versatile it is. You can serve it as whole breasts alongside mashed potatoes, egg noodles, or white rice with a big ladle of that flavor packed sauce. But you can also shred it and use it as an awesome sandwich filling! We like piling the shredded chicken on top of garlic bread and throwing it the oven under the broiler to melt the Swiss cheese, kind of like my garlic bread sloppy joe recipe!
Here’s What you’ll need to make it:

- 2 pounds boneless skinless chicken breasts or boneless chicken thighs
- 1 can beef consommé
- 1 packet dry onion soup mix
- 1 yellow onion or a sweet Vidalia onion, thinly sliced
- 1/4 teaspoon dried thyme or one small sprig of fresh thyme
- One bay leaf
- 1/4 teaspoon black pepper
- 1 cup shredded Swiss cheese (gruyere cheese and mozzarella cheese can be substituted)
A note about beef consommé. If you don’t have this ingredient or can’t find it, you can substitute an equal amount of beef broth. I like to use beef consommé more than beef broth because it packs more flavor. Consommé is a richly flavored clear broth cooked with aromatic vegetables and other ingredients to give it more body.
Step by Step Instructions

- Place the sliced onions in the bottom of the slow cooker. Sprinkle the thyme and black pepper over the onions.
- Next trim any fat off your chicken breasts or chicken thighs and place them on top of the onions.

3. Pour the consommé over the chicken followed by the onion soup mix. Make sure that you evenly sprinkle the soup mix over all of the chicken. Add the bay leaf.

4. Place the lid on the slow cooker and cook on low for 4-6 hours or until the chicken reaches an internal temp of 165 degrees.
5. (Optional) If you’re shredding your chicken, use two forks to gently shred it in the crockpot

6. Add the shredded Swiss cheese to the top of the chicken and put the lid back on.

7. Heat just long enough to melt the cheese and serve!
Store leftovers in an airtight container in the fridge.
