French Onion Chicken
Tender chicken cooked in a rich French onion gravy and topped with cheese, this Crockpot French Onion Chicken is an easy dump and go slow cooker dinner that is perfect for busy weeknights.

- 2 pounds boneless skinless chicken breasts or boneless chicken thighs
- 1 can beef consommé
- 1 packet dry onion soup mix
- 1 yellow onion or a sweet Vidalia onion thinly sliced
- 1/4 teaspoon dried thyme or one small sprig of fresh thyme
- One bay leaf
- 1/4 teaspoon black pepper
- 1 cup shredded Swiss cheese gruyere cheese and mozzarella cheese can be substituted
Place the sliced onions in the bottom of the slow cooker. Sprinkle the thyme and black pepper over the onions.
Next trim any fat off your chicken breasts or chicken thighs and place them on top of the onions.
Pour the consommé over the chicken followed by the onion soup mix. Make sure that you evenly sprinkle the soup mix over all of the chicken. Add the bay leaf.
Place the lid on the slow cooker and cook on low for 4-6 hours or until the chicken reaches an internal temp of 165 degrees.
(Optional) If you're shredding your chicken, use two forks to gently shred it in the crockpot
Add the shredded Swiss cheese to the top of the chicken and put the lid back on.
Heat just long enough to melt the cheese and serve!
