It’s usually the night before that they waltz up and tell you that they need three dozen cookies the next morning before school. No bake peanut butter cookies are a great way to let your kids get involved with cooking a sweet treat and teach them some kitchen responsibilities along the way.

But let me tell you Rice Krispies are good for more than just your standard old rice krispie treats! They give no bake cookies a great texture with that extra special crackle. The smooth Reese’s pieces are a nice touch that will make your cookies stand out from the rest of the no bake crowd, and the creamy peanut butter mixture will satisfy your peanut butter cravings.

What Do I Need To Make Rice Krispies No Bake Cookies?

A bowl of Rice Krispies, a bottle of vanilla extract, a serving of Reese's pieces, 3/4 cup of peanut butter, and a small saucepan of corn syrup, brown sugar, and granulated sugar.
  • ¼ cup packed brown sugar
  • ¼ cup granulated sugar
  • ½ cup light corn syrup
  • ¾ cup peanut butter, both chunky or smooth work fine
  • 1 teaspoon vanilla extract
  • 2 cups crispy rice cereal
  • ½ cup Reese’s Pieces candies

Step by Step Instructions:

The sugar and corn syrup are boiled until they form a smooth consistency which is then stirred by a spatula.
  1. Lay a sheet of waxed paper, parchment paper or a non-stick baking mat on a flat surface.  In a small saucepan, add the brown sugar, granulated sugar and corn syrup. Heat this over medium heat until it comes to a full boil. Remove from the heat and stir in the peanut butter and vanilla extract. 
Rice Krispies and Reese's pieces are stirred into the smooth mixture.

2. Working quickly, add the crisp rice cereal and Reese’s pieces candy. Fold the cereal and candy into the peanut butter mixture until everything is well coated.

A spoonful of the cookies mixture is place onto a baking sheet covered with parchment paper. A person then shaped the mixture into a ball with their fingers.

3. Drop by spoonfuls onto the waxed paper. After you’ve gotten all the Rice Krispie No Bake Cookies dropped onto the waxed paper, you can go through and use your hands to shape them into more uniform shapes if desired.

4. Allow to cool and set up.
