Hamburger Macaroni Soup

Hamburger macaroni soup takes budget friendly ingredients and turns them into a rich and satisfying hearty soup in less than 30 minutes.

I think that hamburger soup with macaroni is one of those recipes that basically everyone I know grew up eating some variation of. Why? For one, it’s a classic. A hearty soup full of ground beef, mixed vegetables, macaroni noodles and a rich tomato infused beef broth. For two, it’s super simple, quick and filling for those nights when you need to have dinner on the table fast. So basically; it’s tired mom friendly, it’s kid friendly, and it’s budget friendly.

Maybe you called it something else growing up, it goes by many names. Goulash soup. Hamburger soup with pasta. Vegetable macaroni soup. No matter what name you give it, this beefy tomato macaroni soup is the epitome of quick and easy comfort food.

What do you need to make this hamburger macaroni soup recipe?

1 pound of lean ground beef
onion
garlic
4 cans of beef broth
2 cans of Italian diced tomatoes
1 can of tomato sauce
1 bag of frozen mixed veggies
macaroni
Italian seasoning

To make this soup recipe, you’ll start by cooking together the hamburger, onion, garlic and Italian seasoning. If you use leaner ground beef there will be no need to drain off the fat. But if you don’t have that on hand you will need to drain the excess fat off the beef.

Add the frozen mixed veggies and undrained Italian diced tomatoes to the stock pot. Then stir in the beef broth and tomato sauce. I know some recipes call for a can of tomato soup instead of tomato sauce and while that’s not my preference for the tomato flavor in this soup recipe, tomato soup does make a good substitution.

Bring to a simmer and let the vegetables simmer for 10 minutes. Then add one cup uncooked elbow macaroni. Simmer just until the macaroni is cooked through. The longer this soup sits, the more it will grow. What I mean by that is that the macaroni noodles will continue to suck up all the broth and make your soup less soupy. So don’t cook the macaroni anymore than needed. It will continue to soften as it sits.

Season your soup to taste with salt and pepper and that’s it! An easy peasy family friendly dinner ready in under 30 minutes.

What should you serve with your hamburger macaroni soup?

Well, I’m a big fan of cornbread with soup, but  my kids love these pull-apart biscuits.

Can you make hamburger macaroni soup in the slow cooker? 

Yes, with slight modifications. Just brown the hamburger with the onion, garlic and Italian seasoning. Drain the fat off the meat and add it along with the mixed veggies and Italian diced tomatoes to the slow cooker. Stir in the beef broth and tomato sauce and cover.  Cook on low for around 6 hours or on high for 4 hours. Prepare the macaroni according to the package instructions and drain. Add the cooked macaroni to the soup and serve.

Ingredients

  • 1 pound ground beef
  • 1/2 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 4, 14.5 ounce cans beef broth
  • 2 , 14.5 ounce cans Italian diced tomatoes, undrained
  • 1 , 15 ounce can tomato sauce
  • 1 12 ounce bag frozen mixed vegetables
  • 1 cup elbow macaroni
  • 1 teaspoon salt, or to taste
  • 1 teaspoon black pepper, or to taste

Instructions

  1. In a large stockpot, cook together the ground beef, onion, garlic and Italian seasoning. Cook and stir, breaking the beef up into crumbles until the hamburger is browned. Drain off the fat and return to the stock pot.
  2. Add the diced tomatoes, mixed veggies, beef broth, and tomato sauce. Bring to a boil and reduce to a simmer. Simmer 10 minutes.
  3. Add the macaroni and cook just until tender.
  4. Season with salt and pepper to taste and serve.
