These soft and chewy churro bars have all the cinnamon and sugar goodness of a churro, but in a quick and easy to make cookie bar recipe! These delicious bars are made even quicker and easier by using a pantry staple you probably already have on hand at home, yellow cake mix! 

I don’t know about where you’re from, but where I’m from in the Midwest, tacos are pretty popular at parties. Birthday parties, graduation parties, you name it, you’re likely to find a taco bar. These churro bars make a great dessert for Mexican night and are easy to make for a crowd! 

Obviously you’re reading this recipe post because you love churros! What’s not to love, crisp edged, chewy centers, covered in cinnamon and sugar. These treats are hard to resist. But then there’s the frying. Ugh, I hate the work and mess of frying individual treats. This dessert bar version makes it so simple to enjoy the flavor of churros without the extra mess or work of frying.

Obviously you can eat these straight from the pan like a cookie bar, but they also make amazing churro sundaes! Top a warm churro bar with a scoop of vanilla ice cream and a drizzle of caramel sauce for an out of this world sundae dessert recipe!

Here’s what you’ll need:

  • 1 box of yellow or golden butter cake mix
  • 1/3 cup of vegetable oil
  • 2 eggs
  • 1 Tablespoon of ground cinnamon, divided
  • 1/4 cup of granulated sugar

How to make Churro Bars:

Step 1: Using an electric mixer, blend together the cake mix, oil, eggs, and half the cinnamon.

Step 2: Using greased hands, press the dough into your prepared 9×9 inch baking pan.

Step 3: Combine the remaining cinnamon with the granulated sugar. Pour the cinnamon sugar over the dough and gently press it down with your hands or the back of a spoon.

Step 4: Bake at 350 degrees for 14 -18 minutes or until the edges have slightly puffed. Allow to cool slightly and cut into squares. Serve warm or cold.

Ingredients

  • 1 box of yellow or golden butter cake mix
  • 1/3 cup of vegetable oil
  • 2 large eggs
  • 1 Tablespoon of ground cinnamon, divided
  • 1/4 cup of granulated sugar

Instructions

  1. Preheat the oven to 350 degrees and prepare a 9x9 inch baking pan with nonstick baking spray.
  2. Combine the cake mix, vegetable oil, eggs, and half the cinnamon using an electric mixer.
  3. Spray your hands with a touch of nonstick baking spray to keep the dough from sticking to your hands as you work. Press the dough evenly into the bottom of the baking pan.
  4. Combine 1/4 cup of sugar with the remaining cinnamon. Sprinkle the cinnamon sugar evenly over the dough. Then lightly press it down into the bars with either your hands or the back of a spoon. This will help it to stick to the top of the bars better.
  5. Bake the churro bars at 350 degrees for 14-18 or until the edges of the bars have slightly puffed. Allow to cool slightly before cutting into squares. Serve warm or cold.

Notes

Made these last night for a taco party with friends being held today. I just tested them and they taste exactly like a churro. And the bonus is they are so easy to make!
