Sometimes I struggle with what is acceptable to include in blog posts, especially with a blog name that includes the word happy. Am I happy all the time? Oh heck no. A lot of times baking is my therapy. It’s how I work out frustrations and stress. I knead it!
Last week was such a stressful week. I spent every day at either a doctor’s appointment or at the hospital with one of my kids while they had a plethora of medical tests run. When I realized that I was going to be too busy to do an AHB post, I was like ‘You know what, I don’t care! I need to bake something or I’m going to explode!’ Hence this caramel apple dump cake.
One morning it was nasty and rainy and I didn’t really have time to bake before work, but I needed to bake! So I knew it was going to have to be simple–a dump cake! There is just something about the scent of baking apples that can raise a person’s spirit’s.
I was a few minutes late to work, but once everyone had a bite of this gooey caramely and buttery sweet cake they all forgave me. And then asked for the recipe.

Caramel Apple Dump Cake
his Caramel Apple Dump Cake is the easiest, yet most delicious cake. With only 4 ingredients and 5 steps it’s completely goof proof.
- 2 cans apple pie filling
- 2/3 cup chopped caramel pieces
- 1 pkg yellow cake mix
- 1 stick of butter melted
- Preheat oven to 350 degrees and prepare a 9 x 13 inch baking pan with nonstick spray.
- Spread the apple pie filling in the bottom of the pan.
- Sprinkle the caramels over the apples
- Spread the cake mix over the caramel and apples.
- Pour the butter evenly over the cake mix.
- Bake for 40-45 minutes or until lightly browned and bubbly along the edges. Serve warm.
