Turkey Swiss and Apple Wraps

An easy lunch recipe to jazz up your lunchbox. Crunchy and sweet, savory and filling with turkey, apples, swiss cheese, red onions and lettuce tossed in a homemade honey mustard vinaigrette, this turkey wrap makes a delicious and healthy choice for lunches.

Ingredients

  • ½ cup thinly sliced red onion
  • 6 ounces deli sliced roasted turkey
  • 1 cup shredded swiss cheese
  • 1 head romaine lettuce coarsely chopped
  • 1 apple thinly sliced
  • 4 large tortillas wraps, 2 lavash breads

Dressing

  • 2 tablespoons apple cider vinegar
  • 1 tablespoon spicy brown mustard
  • 1 tablespoon honey
  • 1 teaspoon olive oil

Instructions

  • Add the red onion to a small bowl of ice water. Set aside while you assemble the rest of the filling. 
  • In a large bowl, whisk together the ingredients for the dressing. Add the turkey, swiss cheese, lettuce and chopped apples to the dressing. 
  • Drain the water from the onion and squeeze dry. Add the onion to the rest of the ingredients and toss to combine. 
  • Heat your tortillas or lavash bread in the microwave for 15-20 seconds to warm and soften. Pile the turkey mixture into the center of your wrap and fold in the edges to wrap. Serve. 

Notes

You can use leftover chicken or turkey in this recipe! Just substitute about ⅔ to 1 cup shredded chicken or turkey.
