Shepherd's Pie with Tater Tots

Ingredients

  • 1 pound 80/20 ground beef
  • 1/2 cup diced onion
  • 1 clove garlic
  • 2 tablespoons all purpose flour
  • 1 10 ounce can beef consomme
  • 1/2 cup milk
  • 2 teaspoons Worcestershire sauce
  • 1 12 ounce bag frozen mixed vegetables
  • 1/2 teaspoon ground black pepper
  • 1 30 ounce bag frozen tater tots
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat the oven to 425 degrees.
  • In a large cast iron skillet, brown the hamburger with the diced onion and garlic.
  • Add the flour to the browned hamburger and stir until it's completely dissolved. On medium heat, whisk in the consomme and milk. Stirring constantly, cook until the mixture has thickened and is bubbly.
  • Stir in the Worcestershire sauce, black pepper, and mixed vegetables.
  • Sprinkle the cheddar cheese over the top of the hamburger and vegetables. Then top with tater tots.
  • Bake at 425 degrees for 25-30 minutes or until the tater tots are golden brown and the sauce is bubbling at the edges.

Notes

If you do not have a cast iron skillet, move the mixture to a 9x13 pan after Step 4 and continue as directed.
