Ingredients

  • 6 slices bacon
  • 2 apples chopped
  • 3 Tablespoons shallot minced
  • 1 Tablespoon brown sugar
  • 4 wedges Laughing Cow Gouda Cheese Spread
  • 4 English muffins split

Instructions

  • In a skillet cook the bacon on medium-high heat until crisp around 6-7 minutes. Remove the bacon to paper towels and discard the remaining bacon grease.
  • Add the apples, shallot, and brown sugar to the skillet. Cook and stir until the apples begin to get tender and the shallots caramelize, about 6-7 minutes. Remove from the heat. Crumble the bacon and add to the apple mixture.
  • Set the oven to broil.
  • Spread each half of the English muffin with half (or more if desired) of a Laughing Cow Cheese spread wedge. Top the English muffins with the apple mixture and place on a baking sheet. Broil 2-3 minutes or until the edges are crispy and browned. Serve warm.

Notes

Any sharp cheese spread can be used for these, try them with cheddar!
