Triple Berry Chocolate Chip Oatmeal Cookies

- 1/2 cup butter , softened to room temperature
- 1/2 cup shortening
- 1 cup white granulated sugar
- 1 cup light brown sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 cups unbleached all purpose flour
- 1 teaspoon baking soda
- 2 1/2 cups rolled oats
- 1/2 cup dried blueberries
- 1/2 cup dried cherries
- 1/2 cup dried cranberries
- 1 cup semi-sweet chocolate chips
Preheat the oven to 350 degrees.
Line baking sheets with parchment paper or silpat baking mats.
In a large mixing bowl, beat together the butter and shortening. Add the white and brown sugar and beat until fluffy. Next beat in the eggs and vanilla.
Add to this the flour and baking soda, mix well.
Stir in the remaining ingredients by hand. The dough will be stiff.
Drop by spoonfuls onto prepared baking sheets. Bake at 350 degrees for 11-13 minutes or until cookies are golden brown. Cool on baking sheets for 1 minute and then remove to wire racks to cool completely.
