Sour Cream Pasta

- 16 oz linguine or other pasta of your choice
- 8- 10 slices bacon cut into pieces
- 2 cloves garlic
- 2 Tablespoons all-purpose flour
- 1 1/2 cups milk
- 1 cup sour cream full fat
- 1 bunch green onions chopped white and green parts divided
- 1 1/2 teaspoon onion powder
- 1 teaspoon seasoned salt
- 1/2 teaspoon ground black pepper
Cook the pasta as per package instructions. Drain with a colander and keep aside, but reserve some of the pasta water for loosening the sauce later if needed.
In a skillet, fry the bacon pieces until crisp. Remove the bacon pieces, but leave the bacon grease in the skillet.
Add the garlic and white parts of green onion to the skillet and cook for 1-2 minutes or until fragrant.
Add the flour to the skillet while whisking constantly so it doesn’t clump together or burn. Cook for another minute or two.
Add the milk to the pan, whisking thoroughly, and let the sauce thicken.
Stir in the sour cream.
Add the cooked pasta, reserved bacon, and green onion tops and mix together. If the pasta is too thick, add a bit of the pasta water to thin the sauce until you get the consistency you desire.
