Sour Cream Pasta

My sour cream pasta features a creamy and tangy sour cream sauce accented by crisp bacon and green onions. A budget friendly main dish that comes together in less than 30 minutes!

Ingredients

  • 16 oz linguine or other pasta of your choice
  • 8- 10 slices bacon cut into pieces
  • 2 cloves garlic
  • 2 Tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1 cup sour cream full fat
  • 1 bunch green onions chopped white and green parts divided
  • 1 1/2 teaspoon onion powder
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon ground black pepper

Instructions

  • Cook the pasta as per package instructions. Drain with a colander and keep aside, but reserve some of the pasta water for loosening the sauce later if needed. 
  • In a skillet, fry the bacon pieces until crisp. Remove the bacon pieces, but leave the bacon grease in the skillet. 
  • Add the garlic and white parts of green onion to the skillet and cook for 1-2 minutes or until fragrant. 
  • Add the flour to the skillet while whisking constantly so it doesn’t clump together or burn. Cook for another minute or two. 
  • Add the milk to the pan, whisking thoroughly, and let the sauce thicken. 
  • Stir in the sour cream. 
  • Add the cooked pasta, reserved bacon, and green onion tops and mix together. If the pasta is too thick, add a bit of the pasta water to thin the sauce until you get the consistency you desire.
