One Pot Italian Chicken and Orzo

- 1 pound chicken breast
- 1 Tablespoon olive oil
- 1 cup orzo
- 3 1/2 cups frozen pepper and onion stir fry blend
- 3 1/2 cups chopped zucchini about 2 small or 1 large zucchini
- 1 24 ounce jar marinara sauce
- 1 14.5 ounce canned Italian style tomatoes
Heat one tablespoon of olive oil over medium high heat in a 5 quart or larger pan. Cut the chicken into bite sized pieces and brown in the olive oil.
Add the chopped zucchini, pepper and onion blend, canned tomatoes, orzo and marinara sauce to the chicken. Stir to combine and cover. Simmer on low heat for 25 minutes, stirring occasionally.
