Huevo in the Hole, an Egg in the Hole Recipe

Huevo in a Hole, a Mexican twist on the classic Egg in the Hole. You only need 3 ingredients and 5 minutes to make this crisp edged, soft centered, corn tortilla and fried egg wonder.

Ingredients

  • 3 corn tortillas small
  • 1 large egg
  • 2 Tablespoons butter
  • salt to taste
  • black pepper to taste

Instructions

  • Stack 3 tortillas and using a biscuit cutter (or a cookie cutter) cut the center from the tortillas. Discard the center pieces.
  • Heat your skillet or griddle over medium heat and add about 1-2 Tablespoons of butter, oil, or bacon grease to the pan.
  • Add the stack of tortillas to the pan and let them cook for about 30-45 seconds before cracking your egg right into the hole. Season the egg well with salt and black pepper. Let it cook for 1-2 minutes or until the bottom of the egg is set. Then flip the tortilla and egg over to cook for another minute or until your preferred level of doneness.
  • Immediately move your huevo to a plate and garnish it with toppings of your choice. Serve.
