Huevo in the Hole, an Egg in the Hole Recipe
Huevo in a Hole, a Mexican twist on the classic Egg in the Hole. You only need 3 ingredients and 5 minutes to make this crisp edged, soft centered, corn tortilla and fried egg wonder.

- 3 corn tortillas small
- 1 large egg
- 2 Tablespoons butter
- salt to taste
- black pepper to taste
Stack 3 tortillas and using a biscuit cutter (or a cookie cutter) cut the center from the tortillas. Discard the center pieces.
Heat your skillet or griddle over medium heat and add about 1-2 Tablespoons of butter, oil, or bacon grease to the pan.
Add the stack of tortillas to the pan and let them cook for about 30-45 seconds before cracking your egg right into the hole. Season the egg well with salt and black pepper. Let it cook for 1-2 minutes or until the bottom of the egg is set. Then flip the tortilla and egg over to cook for another minute or until your preferred level of doneness.
Immediately move your huevo to a plate and garnish it with toppings of your choice. Serve.
