- 2 15 ounce cans corn
- 1 red bell pepper
- 6 green onions
- 1.5 cups shredded cheddar
- 1/2 cup mayo
- 1/2 cup sour cream
- 1-2 Tablespoons adobo sauce optional*
- 1 bag Chili Cheese Fritos
Drain the corn.
Chop the bell peppers and thinly slice the green onions.
Add all the ingredients except the Fritos chips and mix well.
Crush the fritos chips and stir in immediately before serving.
This salad does not hold over well and is best when eaten the day it is made.
*If you don't have adobo sauce, try substituting your favorite hot sauce. Or omit completely if you don't like spicy foods.
