Fiesta Corn Dip
Fiesta Corn Dip is quick and easy to make, full of flavor, spice, corn kernels, veggies and cheese!

- 3 11 ounce cans mexican style corn, drained
- 1 15 ounce can black beans, rinsed and drained
- 1 10 ounce can rotel tomatoes
- ⅔ cup pickled jalapenos or 1 7 ounce can, drained and chopped
- 2 cups shredded mild cheddar cheese
- 1 cup sour cream
- 1 cup mayo
- 5 green onions thinly sliced
- 1 Tablespoon Tajin seasoning
- 1 1 ounce packet Fiesta ranch dip mix
- ⅔ cup queso fresca topping
Add all your ingredients to a large bowl.
Mix until well combined. Allow to chill for around 2 hours to let flavors mix.
Before serving, crumble queso fresca over the top, if desired.
- Have frozen corn or fresh corn you need to use? Use them in this dip too.
- Cilantro would be a great addition.
- Do not freeze this dip!
- Don’t like mayo? Use plain Greek yogurt.
