Ingredients

  • 2 large eggs
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1 stick butter softened to room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup all purpose unbleached flour
  • 1 cup mini chocolate chips
  • 1 recipe pie crust

Instructions

  • Preheat the oven to 350 degrees.
  • Prepare and flute your pie crust in a 9 inch pie plate.
  • In a medium sized bowl, beat the eggs until they are light and foamy. Add in the sugars and vanilla and beat well. Next add the softened butter and beat until it's completely incorporated throughout and no lumps remain.
  • Add the flour and mix on low, just until mixed. Stir the chocolate chips in by hand and spoon the filling into the prepared pie crust.
  • Bake at 325 degrees for 60-65 minutes or until golden brown.
