- 2 lbs baby red potatoes cut into bite size pieces OR 1 (2lb) bag frozen hashbrowns
- 1 15 ounce jar classic alfredo sauce (recommend Bertolli)
- 1 quart vegetable broth
Add the potatoes and veggie broth to a stock pot.
Bring to a boil and cook until the potatoes have softened, about 20 minutes.
Turn the heat to low and add the alfredo sauce. Simmer for another 5 minutes.
Serve as is, or top with shredded cheese, bacon bits and chives.
