Cranberry Almond Granola

This healthy granola packs a secret punch of veggies! Sweetened with not only honey, and a teensy bit of brown sugar, but also utilizing the natural sugars in carrots.

  • 1 cup finely grated carrots
  • 1 Tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 3 cups old fashioned oats
  • 1 cup sliced almonds
  • 1/3 cup honey
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries


  1. Heat the oven to 285 degrees. In a large bowl, combine the grated carrots, brown sugar, and cinnamon. Add to this the oats and almonds. In a small bowl, combine the honey, vegetable oil, and vanilla, stirring to combine. (It will still be a little bit separated, the goal is just to get them as mixed as possible.) Pour over the oats, almonds, and carrots, mixing until everything is well coated.
  2. Spread evenly over a baking sheet.
  3. Bake at 285 degrees for 25 minutes, then remove and stir.

  4. Bake for another 25 minutes. The granola should be lightly toasted and brown all over. 

  5. Add in the cranberries and let cool completely before storing.

Recipe Notes

Will keep for up to 2 weeks in an air tight container.
