Peaches and Cream Muffins

  • 1 1/2 cups unbleached all purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 5 oz carton peach Greek yogurt
  • 1/4 cup vegetable oil
  • 1 cup chopped peaches
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 Tablespoons melted butter
  • 1 Tablespoon milk


  1. Preheat the oven to 400 degrees.
  2. Prepare a muffin tin with paper liners or grease with non-stick baking spray.
  3. In a medium sized mixing bowl, combine the dry ingredients and make a well in the center.
  4. In small bowl, beat the egg, then add in the yogurt and oil and blend well.
  5. Pour the egg and yogurt mixture into the flour and mix until just moistened.
  6. Stir in the peaches.
  7. Fill the muffin cups 3/4 full and bake at 400 degrees for 20-23 minutes or until a toothpick inserted into the center of the muffin comes out clean.
  8. Cool for 5 minutes in the pan and then remove to a wire rack.
  9. To make the glaze, whisk together the melted butter, vanilla, milk and powdered sugar in small bowl until it it is smooth and lump free. Drizzle over the tops of the cooled muffins.
