  • 1 pound Italian sausage
  • 1 medium sweet onion chopped
  • 2 ribs of celery chopped
  • 2 medium carrots chopped
  • 1 cup chopped mushrooms
  • 2 teaspoons minced garlic
  • 6 cups beef broth
  • 1 can italian diced tomatoes
  • 1 can tomato soup
  • 1 19 ounce bag frozen cheese tortellini
  • 1/2 box frozen chopped spinach thawed and excess moisture squeezed out
  • salt and pepper


  1. In a large stockpot, cook the Italian sausage, garlic, and onion until the sausage is completely browned. Drain.
  2. Add to the stockpot the celery, carrots, mushrooms, beef broth, diced tomatoes and tomato soup. Bring to a boil and reduce to a simmer. Simmer for 15 minutes.
  3. Add the spinach and tortellini and simmer for another 10 minutes.
  4. Season to taste with salt and pepper. Top with fresh grated parmesan if desired.
