Pepper Slaw

This pepper slaw is refreshingly different. Sweet and tangy and full of colorful fresh veggies.

Ingredients

  • 1 bag coleslaw mix
  • 2 large green bell peppers
  • 2 large red bell peppers
  • 4 green onions
  • 1 stalk celery
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon celery seed
  • 1 Tablespoon poppy seeds
  • 2 Tablespoons balsamic vinegar
  • 1/4 cup apple cider vinegar
  • 1/2 cup mayo

Instructions

  1. Julienne the bell peppers. Thinly slice the green onion and celery. Combine with the bag of coleslaw mix in a large bowl.
  2. In a small bowl whisk together the vinaigrette ingredients until completely combined and pour over the slaw. Let sit and chill for a few hours before serving
