Cheddar Jalapeno Spoonbread

Super moist cornbread loaded with corn, cheese, and zesty jalapenos. It makes a great side dish that goes with so many meals.

Ingredients

  • 1 cup canned creamed corn
  • 3/4 cup milk
  • 1/2 cup butter melted
  • 2 eggs beaten
  • 1 cup yellow cornmeal
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 4 oz can chopped green chiles
  • 1 1/2 cups shredded sharp cheddar
  • 2 Tablespoons chopped pickled jalapenos

Instructions

  1. Preheat the oven to 350 degrees.
  2. Spray a 2 quart casserole dish with non stick spray.
  3. In a medium sized mixing bowl, combine all the ingredients. Pour into the casserole dish and bake for 45 minutes or until the spoonbread is set in the center.
