Amish Country Casserole

Amish country casserole is the perfect main dish for those busy weeknights. It’s easy, budget-friendly, and filling. This cozy casserole is made with ground beef, noodles, an easy homemade sauce (without cream of mushroom soup) and topped off with Parmesan cheese.

You know, even though I live right near Missouri Amish country, I’m not sure that this is technically an Amish recipe. Even if it’s not 100%  authentic, does that really matter? It’s still a super easy weeknight meal that’s quick to get on the table.

Maybe you’ve had this casserole before. I’ll warn you mine’s just a little bit different.

My Amish country casserole recipe does not have cream of mushroom soup in it. It’s not that I hate cream of mushroom soup. I’m allergic to mushrooms. So I’ve changed this recipe so that I could still eat it. And as an added bonus, without the cream of mushroom soup, you can omit the baking that comes along with most recipes for Amish country casserole, because it all cooks together on the stove top. I like making it in my handy dandy cast iron skillet. I seriously could not live with out my cast iron skillet. 

However, if you like crispy edges on your noodles, you can still throw it in the oven. 😉A serving of Amish Country Casserole on a white plate with a fork to the side.

What you’ll need to make this casserole:

  • Egg noodles or rotini
    Ground beef
    Chopped onion
    Paprika
    Garlic salt
    Pepper
    Flour
    Beef broth
    Tomato soup
    Milk
    Parmesan cheese

To make Amish Country Casserole:

You’ll start by cooking the noodles according to the package directions and draining them well. Meanwhile, brown together 1 lb of ground beef and the diced onion. Do not drain the grease.The seasonings needed for the Amish Country casserole.

To the ground beef add the paprika, garlic salt, pepper, and flour. Stir it together well until the spices are completely incorporated into the beef.The seasonings are added to the ground beef in the pan.

Over medium heat cook and stir the beef while slowly adding the broth, milk, and tomato soup.Milk is poured into the ground beef mixture.

Bring the mixture to a simmer until the sauce thickens.

When the sauce has thickened add the cooked noodles and heat thru.After the sauce is made, the cooked noodles are added.Top the casserole off with shredded Parmesan cheese and a bit of dried parsley.

This easy meal goes great with roasted veggies and fruit salad

Note: This recipe makes a big batch! 8-10 servings! If this is too much for your family feel free to freeze half of it to have later! 

Freezer instructions: Prepare as directed and then tightly cover in a freezer safe pan.  To reheat the casserole, let the casserole thaw in the fridge for 24 hours. Then bake at 350 degrees for 25-30 minutes.

Ingredients

  • 12 ounces egg noodles or rotini pasta
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 teaspoon paprika
  • 1 teaspoon garlic salt
  • 1/2 teaspoon pepper
  • 2 Tablespoons all purpose flour
  • 1 (14.5 ounce) can beef broth
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 cup milk (or 1/2 & 1/2)
  • 1/2 teaspoon dried parsley
  • 1 cup Parmesan

Instructions

  1. Cook the pasta according to the directions on the package. Drain and set aside.
  2. Meanwhile, in a large skillet, brown together the ground beef and onion. Do not drain the grease.
  3. Add the paprika, garlic salt, pepper, and flour to the ground beef. Cook and stir until all the seasonings have been incorporated.
  4. Over medium-high heat, add the broth, tomato soup, and milk. Cook and stir until the mixture comes to a simmer and thickens up.
  5. Add the cooked noodles to the sauce and heat through.
  6. Sprinkle the parsley and Parmesan over the top and serve.

Notes

I agree there are some similarities, but I think they are pretty different overall. One thing's for certain. They've both got that hearty and filling Mid-Western flair going on.
